Slow Cooker Lasagna

  • 1 pound ground beef (or Italian sausage)
  • 1 (24 ounce) jar spaghetti sauce
  • 1 cup water
  • 1 (15 ounce) container ricotta cheese
  • 2 cups shredded Italian Cheese (divided)
  • 1/4 cup grated Parmesan cheese (divided)
  • 1 egg
  • 2 Tablespoons fresh parsley (chopped)
  • 6 regular lasagna noodles (uncooked)
DIRECTIONS:
  1. Brown ground beef in a large skillet; drain grease and rinse well.
  2. Stir in spaghetti sauce and water.
  3. In another bowl mix ricotta, 1-1/2 cups Italian cheese, 2 Tablespoons Parmesan, egg and parsley.
  4. Spoon 1 cup meat sauce into slow cooker; top with 3 lasagna noodles, broken to fit; and half of cheese mixture.
  5. Cover with 2 cups meat sauce. Top with remaining noodles, broken to fit; cheese mixture and meat sauce. Cover with lid.
  6. Cook on low 4-6 hours or until liquid is absorbed.
  7. Sprinkle with remaining cheese.
  8. Let stand, covered for 10 minutes or until cheese is melted.

Root Beer Pulled Pork Sandwiches



  • 1 (3 pound) pork roast (I used boneless)
  • 1 (12 ounce) can root beer
  • 1 (18 ounce) bottle BBQ sauce (we love Famous Dave's Rich and Sassy)
  • 8 hamburger buns
DIRECTIONS:
  1. Spray your slow cooker with nonstick cooking spray. Place roast inside slow cooker and pour the root beer over the meat.
  2. Cook on low for about 6-8 hours (or until meat easily shreds).
  3. Take the roast out of the slow cooker and shred using two forks (it should just fall apart). Drain the root beer out of the slow cooker and place the shredded roast back inside. Stir in the bottle of BBQ sauce.
  4. Keep warm in the slow cooker until serving.
  5. Place meat on hamburger buns and serve.

Honey Lime Chicken Tenders

  • 5 boneless skinless chicken breasts*
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons pepper
  • 1 1/8 cups flour
  • 3/4 cup Panko bread crumbs
  • 3 Tablespoon butter
  • Sauce:*
  • 2 1/4 Tablespoons lime juice
  • 3/4 cup honey
  • 1 1/2 Tablespoons hot sauce
  • 3/4 cup brown sugar

Chicken:
Chicken tenderloins would cook faster and more evenly

Sauce:
This sauce was way too sweet.  Tasted like straight honey.  A sweet and sour sauce or teriyaki sauce would be better.  Either bottled or homemade.  

Pan:
A pain to clean!  Make sure to spray and use butter.  Maybe parchment paper in the bottom.
DIRECTIONS:
  1. Preheat oven to 350 degrees.
  2. Slice chicken into 2 inch strips, or chunks.
  3. In a large gallon sized bag, mix together salt, pepper, flour, and bread crumbs.
  4. Place chicken strips into bag and shake bag until all chicken is coated.
  5. In a 9x13 pan, heat butter in oven until melted.
  6. Add chicken to pan evenly spaced.
  7. Bake for 12 minutes. Remove from oven and flip chicken. Bake for additional 10 minutes.
  8. While chicken is baking, whisk together all ingredients for sauce.
  9. Remove chicken from oven, and pour sauce over chicken, coating all the pieces.
  10. Bake for an additional 5 minutes.
  11. Remove from oven and serve.

Slow Cooker Italian Chicken

  • 4 boneless skinless chicken breasts
  • 1 (1 ounce) package zesty Italian dressing mix
  • 1 (8 ounce) package cream cheese (softened)
  • 2 (10.75 ounce) cans cream of chicken soup
  • 1 (16 ounce) box pasta (we like rigatoni or bow tie pasta)
DIRECTIONS:
  1. Place chicken in a slow cooker and sprinkle Italian dressing mix over top. 
  2. Combine cream cheese and cream of chicken soup in a small bowl and whisk until smooth and spoon over chicken. 
  3. Cook on low 4-6 hours. 
  4. Once chicken is done, remove from the slow cooker and shred with 2 forks. Return to slow cooker and mix in with the rest of the sauce before serving.
  5. Serve chicken over cooked pasta. Garnish with chopped parsley and shredded parmesan cheese (optional).

Barbecue Chicken Calzones

  • 6 strips bacon
  • 1/2 cup diced red onion
  • 4 boneless skinless chicken breasts (cooked and shredded)
  • 1 Tablespoon extra virgin olive oil
  • 1 (16 ounce) bottle barbecue sauce (divided)
  • 1 (16.3 ounce) package refrigerated biscuits
  • 1 cup shredded Mozzarella cheese
  • 2 Tablespoons fresh cilantro (chopped)
INSTRUCTIONS
  1. Preheat oven to 400 degrees. Fry bacon in a large skillet over medium-high heat until crisp. Remove bacon from pan, blot with paper towels and crumble. 
  2. Add onion and shredded chicken to a pan with olive oil.  Saute over medium heat until onion is tender. Stir in 1/2 cup barbecue sauce and remove from heat. Mix in crumbled bacon.
  3. Flatten out biscuit dough on a greased cookie sheet. Spread a teaspoon of barbecue sauce on each biscuit. Divide the chicken mixture between the biscuits, spreading on only half of each biscuit and keeping 1/2 inch away from the edge. 
  4. Sprinkle cheese and cilantro over top of each biscuit. 
  5. Fold biscuits in half and press the edges together with a fork to seal. 
  6. Bake for 12-14 minutes, or until golden brown. 
  7. Serve with additional barbecue sauce for dipping.
