Honey Lime Chicken Tenders

  • 5 boneless skinless chicken breasts*
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons pepper
  • 1 1/8 cups flour
  • 3/4 cup Panko bread crumbs
  • 3 Tablespoon butter
  • Sauce:*
  • 2 1/4 Tablespoons lime juice
  • 3/4 cup honey
  • 1 1/2 Tablespoons hot sauce
  • 3/4 cup brown sugar

Chicken:
Chicken tenderloins would cook faster and more evenly

Sauce:
This sauce was way too sweet.  Tasted like straight honey.  A sweet and sour sauce or teriyaki sauce would be better.  Either bottled or homemade.  

Pan:
A pain to clean!  Make sure to spray and use butter.  Maybe parchment paper in the bottom.
DIRECTIONS:
  1. Preheat oven to 350 degrees.
  2. Slice chicken into 2 inch strips, or chunks.
  3. In a large gallon sized bag, mix together salt, pepper, flour, and bread crumbs.
  4. Place chicken strips into bag and shake bag until all chicken is coated.
  5. In a 9x13 pan, heat butter in oven until melted.
  6. Add chicken to pan evenly spaced.
  7. Bake for 12 minutes. Remove from oven and flip chicken. Bake for additional 10 minutes.
  8. While chicken is baking, whisk together all ingredients for sauce.
  9. Remove chicken from oven, and pour sauce over chicken, coating all the pieces.
  10. Bake for an additional 5 minutes.
  11. Remove from oven and serve.
